1/2 cup of linseed
1 egg
1 teaspoon of baking powder
Salt/Artificial Sweetener
2 tablespoons of butter
Soften the butter in the microwave. Add the egg, the baking powder, the salt or artificial sweetener and stir until combined. In a food processor, grind the linseed until it looks like a powder. Add to your mixture and heat in the microwave for 1 minute or until done. If you insert a toothpick it should come out clean.
You can add cocoa powder or vanilla extract if you decided making it sweet.
This is a great recipe I tried today and i fell in love with it. Its very quick and easy and still delicious. Don't worry about eating or not the linseed, it has got no carbs and really gives a lot of texture to the cake. This cake can be a little bit dry, so I tried it with some heavy cream on top and it was very delicious.

"Yogurt"
1/2 cup of water
1/2 cup of heavy cream*
1 teaspoon of unflavored gelatin
Combine the unflavored gelatin and the water and let sit for 5 minutes. Microwave on high for 1 1/2 minutes. Add the heavy cream and stir until combined. Let it cool in the fridge until set. You will notice once its done that some lumps have formed. I put mine on the blender for some seconds and after that the lumps disappeared.
*: You can substitute half of the heavy cream with cream cheese for a more creamy yogurt.
This recipe worked out really good for me. It tastes like a milk pudding with a yogurt-gelatin like consistency. You can add vanilla extract and artificial sweetener if you want, but i decided to make mine plain, in order to use it in many different recipes.

No Bake Chocolate Cheesecake
50 grams of cream cheese
1 cup of water
1 package of unflavored gelatin
3 teaspoons of unsweetened cocoa powder
1 1/2 package of Splenda or any artificial sweetener equivalent to 3 teaspoons of sugar
1/2 teaspoon vanilla extract
Mix the gelatin and the water and let it sit for 5 minutes. Meanwhile, blend the cocoa powder and the cream cheese together. Heat the water in the microwave for about 1 minute. Add to the water the splenda and stir. Add gradually to the cream cheese mixture stirring constantly. Add the vanilla extract. Cool in the fridge until set, this will take at least 2 hours.

Lemon scented soda
200ml (1 cup) of Diet Coke or Sprite Zero
2 tablespoons of lemon juice
3 ice cubes
1/2 teaspoon vanilla extract (optional)
Mix everything together in a glass. Decorate with a lemon slice.
This might sound very simple but it is really tasty. The lemon makes a big difference when added to a soda.
Caprese Kebabs
5 skewers
10 cherry tomatoes
10 cheese cubes
10 fresh basil leaves
Oregano
Put on one skewer a cherry tomato, a cheese cube and a basil leave, put another tomato, another cheese cube and another basil leave. Repeat this process with the rest of the ingredients. Sprinkle some oregano on top for extra flavor.
This are very simple but really good. They make a great snack you can take wherever you go.
Ham Roll Ups
8 Slices of ham
3 tablespoons of Cream cheese
1 mashed avocado
In a slice of ham put one tablespoon of cream cheese or 1 tablespoon of mashed avocado. Roll it up and cut if you want to. Repeat this process with the rest of the ingredients.
As you can see this is an incredibly easy recipe that makes a great snack. Use whatever you want as filling, such as tomatoes, cheese, onion, cucumber, etc.

If you want, add more or less coffee, cocoa powder or any ingredient. You can substitute the heavy cream and the water with soy or almond milk.
